Receta Chicken With Tomatoes And Peppers

Ingredientes
- 2 med sized tomatoes peeled & seeded in 1/2" cubes
- 1 x red bell pepper peeled & seeded in 1/2" pcs
- 2 x fresh jalapeos seeded in 1/4" pcs
- 1 sm yellow or possibly white onion
- 1 Tbsp. crushed garlic
- 2 x handsfull of pimentoed olives with the juice squeezed out
- 3 Tbsp. mango chutney chicken meat in 3/4" to 1" chunks
- 2 Tbsp. rice wine vinegar 1/4 1/2 c. of brandy
Direcciones
- Sautee the chicken in a little extra virgin olive oil with some black pepper a bit of the garlic and a small amount of salt. Set it aside.
- Sautee the red peppers jalapeos onions and garic in extra virgin olive oil for a couple of min. Then add in the tomato olives chutney and chicken. After a few min deglaze with the brandy and vinegar. Reduce the heat to medium and cook till there is just sufficient liquid to moisten rice or possibly pasta.
- Pour it over rice or possibly pasta or possibly maybe something like wheat pilaf.
