Receta Chicken Xinxim (Xinxim De Galinha)

Ingredientes
- 8 x boneless skinless chicken thighs
- 2 tsp extra virgin olive oil
- 1 x tomato seeded, minced
- 1 x white onion minced
- 1 bn cilantro minced
- 1 tsp dende oil see * Note
- 2 Tbsp. coconut lowfat milk
- 1 x garlic clove chopped Juice of 1 lemon
- 1 tsp finely-minced peanuts

- * Note: Dende oil comes from the West African palm tree and may be purchased at Caribbean markets. Peanut oil may be substituted but it will have a different flavor.
- Cut chicken into 2-inch chunks and brown with oil in skillet, 6 to 8 min. Add in tomato, onion, cilantro, dende oil, coconut lowfat milk, garlic and lemon juice. Sprinkle with grnd peanuts. Cook over low heat 25 min before serving warm.
- This recipe yields 4 servings.
