Receta Chicory And Orange Salad

- Rinse and wipe the chicory dry.
- Trim off the base and slice the chicory across the grain into 5mm rounds.
- Put these into a bowl breaking them up slightly with your fingers to separate the rings.
- Peel the oranges removing as much of the white pith as possible.
- Slice them in half then slice them across the grain into 5mm slices as well.
- Remove any pips.
- Add in the oranges to the chicory and mix gently together.
- Put the salad oil lemon juice sugar salt and mustard into a screwtop jar and shake well or possibly whisk all the dressing ingredients together in a bowl.
- Pour over the salad toss it well and allow it to stand for the flavours to develop for 15 min before serving.
- If you are using the crushed walnuts sprinkle them generously over the salad. They add in a lovely crunch.
- The combination of slightly bitter chicory with the sweetness of oranges makes a marvellous refreshing salad. Add in some cottage cheese and you have a delicious satisfying lowcalorie lunch.
