-they%20were%203%20for%20a%20buck%20and%20the%20PERFECT%20cooking%20size.%20You%20know%20what%20I%20mean%20right?%20Just%20like%20eh...and%20inch%20and%20a%20half%20in%20diameter%20and%20not%20gigantic%20but%20not%20tiny.%20And%20zucchini%20season%20is%20quickly%20ending.%20Sad.%20That%20and%20strawberries%20are%20my%20summer%20loves!%3C/p%3E%3Cp%3EBut%20what%20to%20do%20with%20them?%20I%20was%20at%20a%20loss%20for%20dinner%20the%20other%20night..so%20I%20played%20on%20Swagbucks%20a%20little%20while%20looking%20for%20zucchini%20recipes%20and%20found%20one%20at%20About.com%20(btw...both%20about%20and%20swag%20are%20awesome%20sights,%20just%20sayin').%3C/p%3E%3Cp%3EHowever,%20I%20didn't%20have%20the%20recipe%20components%20that%20I%20needed...I%20had%20most%20of%20the%20them...but%20not%20all%20of%20them.%20AND%20I%20had%20my%20in-laws%20to%20feed%20too.%3C/p%3E%3Cp%3ESo%20what%20does%20Suzy%20do?%20IMPROVISE%20with%20what%20you%20have!%20And%20I%20did..and%20it%20was%20goooooood!%3C/p%3E%3Cp%3EOven%20on%20350%3C/p%3E%3Cp%3E8x8%20pan%20(greased)%3C/p%3E%3Cp%3Etake%20the%20sausage%20out%20of%20the%20casing%20and%20brown%20it%3C/p%3E%3Cp%3Eget%20some%20salted%20water%20boiling%20and%20put%20your%20zucchini%20in%20there%20for%20just%20about%205%20minutes-don't%20get%20soggy%20but%20cook%20a%20bit..take%20them%20out%20and%20put%20them%20on%20a%20baking%20sheet%20and%20sprinkle%20with%20the%20cajun%20seasoning%3C/p%3E%3Cp%3EMix%20together%20egg%20yolks,%20sour%20cream,%20and%20flour%3C/p%3E%3Cp%3EIn%20another%20bowl%20beat%20the%20egg%20whites%20until%20peaky,%20then%20fold%20into%20the%20yolk%20mix%3C/p%3E%3Cp%3EGot%20your%20cheese%20out?%3C/p%3E%3Cp%3ETime%20to%20layer!%3C/p%3E%3Cp%3EPan-1/2%20of%20zucchinis%20+%201/2%20of%20egg/sour%20cream%20mix%20+%20pepperjack%20cheese%20+%20ALL%20the%20turkey%20sausage%3C/p%3E%3Cp%3Ethen%20repeat%20other%201/2%20of%20zucchinis%20+%20other%20half%20of%20egg/sc%20mix%20+%20cheddar%20cheese%3C/p%3E%3Cp%3EMix%20your%20melted%20butter%20with%20the%20breadcrumbs,%20top%20it%20off%20and%20put%20it%20in%20the%20oven%20for%2030%20minutes.%3C/p%3E%3Cp%3EYuuuuuum.%20Really..it%20was.%20I%20loved%20it!%20I%20think%20you%20could%20easily%20sub%20potatoes%20if%20you%20aren't%20a%20fan%20of%20zucchini%20(or%20if%20the%20husband%20isn't%20a%20fan,%20like%20mine).%20Best%20part%20about%20this?%20Even%20though%20it%20had%20kind%20of%20a%20sour%20cream%20custard%20thing%20going%20on..it%20wasn't%20heavy,%20at%20all!%3C/p%3E%3Cp%3EI%20can't%20stress%20it%20enough%20to%20NOT%20be%20afraid%20to%20experiment%20and%20improvise%20in%20the%20kitchen!%20I%20think%20that%20is%20the%20biggest%20thing%20that%20blogging%20has%20taught%20me!%20I%20see%20all%20these%20great%20recipes,%20but%20I%20don't%20always%20have%20the%20resources%20to%20go%20to%20the%20store%20and%20get%20EXACTLY%20what%20it%20calls%20for..so%20I%20make%20do,%20and%20I'm%20so%20glad%20that%20I%20do!%3C/p%3E){kind=link}
