Ingredientes

  • 1 sm. onion, peeled and finely minced
  • 1 1/2 T butter
  • 1/4 ounce plum tomatoes, liquid removed, seeded and minced
  • 3 ounce cream cheese, cubed
  • 1/2 c. chicken broth/stock
  • 3/4 c. light cream
  • 2 teaspoon fresh lemon juice
  • Cayenne pepper to taste
  • Salt to taste, if you like
  • Tortilla chips, salsa and guacamole

Direcciones

  1. In large saucepan, cook onion in butter till soft. Add in tomatoes. Cook 10 min, stirring, till liquid evaporated. Stir in cream cheese. When cream cheese has melted, add in broth, cream, lemon juice and cayenne. Add in spices. Cover and heat to serving temperature. Don't boil. Serve soup with tortilla chips, salsa and guacamole. Makes 2 servings. May be made into double recipe.
