Chilled Cream Of Cucumber Soup

Ingredientes

  • 2 med Cucumbers, peeled & diced
  • 1 c. Water
  • 1 sm Onion, sliced
  • 2 tsp Salt
  • 1/8 tsp Black pepper
  • 3/4 c. Heavy cream
  • 1 Tbsp. Minced chives
  • 4 Tbsp. Flour
  • 2 c. Chicken broth
  • 2 whl cloves

Direcciones

  1. Cook cucumbers, water, onion, salt & pepper till cucumbers are tender. Put in blender till smooth. Dissolve flour in 1/2 c. chicken stock. Combine with pureed cucumber, remaining chicken broth & cloves. Cook over medium heat, stirring constantly, till it boils. Boil for 2 min. Chill.
  2. Before serving, remove cloves, add in cream & finely minced chives.
