Receta Chilled Cream Of Cucumber Soup

Ingredientes
- 2 med Cucumbers, peeled & diced
- 1 c. Water
- 1 sm Onion, sliced
- 2 tsp Salt
- 1/8 tsp Black pepper
- 3/4 c. Heavy cream
- 1 Tbsp. Minced chives
- 4 Tbsp. Flour
- 2 c. Chicken broth
- 2 whl cloves
Direcciones
- Cook cucumbers, water, onion, salt & pepper till cucumbers are tender. Put in blender till smooth. Dissolve flour in 1/2 c. chicken stock. Combine with pureed cucumber, remaining chicken broth & cloves. Cook over medium heat, stirring constantly, till it boils. Boil for 2 min. Chill.
- Before serving, remove cloves, add in cream & finely minced chives.
