Ingredientes

  • 4 x salmon fillets with skin removed (4 oz each)
  • 1 c. minced fresh tomato
  • 1/2 x avocado, minced (I omit this item because I don't like avocados)
  • 1 clv garlic, minced
  • 1 Tbsp. balsamic vinegar
  • 1 tsp extra virgin olive oil
  • 1/2 c. cooked corn kernels
  • 1/4 c. chopped red onion
  • 1/4 c. minced fresh cilantro salt & pepper to taste
  • 1 x lime, cut in wedges

Direcciones

  1. Place salmon in a shallow microwave bowl.
  2. Add in 2 c. water; cover & microwave onHIGH 7 to 9 min or possibly till salmon iscooked as desired. Remove from water;chill till cold.
  3. In a small bowl, combine remainingingredients (except lime.)
  4. Chill 30 min.
  5. Serve Salmon surrounded by the salsa and lime wedges.
  6. Serves 4
