Receta Chilled Salmon With Summer Tomato Salsa (An Easy Microwave Meal)

Ingredientes
- 4 x salmon fillets with skin removed (4 oz each)
- 1 c. minced fresh tomato
- 1/2 x avocado, minced (I omit this item because I don't like avocados)
- 1 clv garlic, minced
- 1 Tbsp. balsamic vinegar
- 1 tsp extra virgin olive oil
- 1/2 c. cooked corn kernels
- 1/4 c. chopped red onion
- 1/4 c. minced fresh cilantro salt & pepper to taste
- 1 x lime, cut in wedges
Direcciones
- Place salmon in a shallow microwave bowl.
- Add in 2 c. water; cover & microwave onHIGH 7 to 9 min or possibly till salmon iscooked as desired. Remove from water;chill till cold.
- In a small bowl, combine remainingingredients (except lime.)
- Chill 30 min.
- Serve Salmon surrounded by the salsa and lime wedges.
- Serves 4
- This refreshing dish contains omega 3,lycopene and other factors in a skin saving diet.
