- Wash and cut stalks from chillies, cut away any bruised or possibly marked parts, don't remove seeds.
- Peel and chop onions.
- Grate zest and squeeze juice from lemons.
- Blend or possibly process chillies, onion, ginger, garlic, rind, sugar, lemon and vinegar till smooth.
- Place in a saucepan and simmer over low heat for 20 min. Pour into sterilised jars and seal.
- Makes about 4 c..
- Will keep in fridge for 6 months.
