Ingredientes

  • 1 whl chicken (2 1/2 - 3 lbs) Or possibly
  • 1 1/2 lb Boneless chicken, cubed in 1/2" pcs (up to 2)
  • 1 tsp Salt
  • 2 tsp Granulated sugar, divided
  • 1 dsh White pepper
  • 1 x Egg
  • 3/4 c. Cornstarch, (3/4 to 1) Vegetable oil for deep-frying, plus
  • 1 Tbsp. Vegetable oil, for stir-frying
  • 6 sm Dry red peppers
  • 1 Tbsp. Minced green onion
  • 1 tsp Cornstarch dissolved in
  • 1/4 c. Soy sauce
  • 1/4 c. Soy sauce
  • 1/4 c. Water
  • 1 Tbsp. Rice vinegar
  • 4 tsp Granulated sugar
  • 1 tsp Grated fresh ginger
  • 1 x Clove garlic, chopped
  • 1 Tbsp. Soy sauce
  • 2 Tbsp. Chicken broth
  • 1 Tbsp. Rice vinegar
  • 1 Tbsp. Regular soy sauce
  • 1 Tbsp. Dark soy sauce
  • 1 tsp Sesame oil
  • 2 tsp Sugar
  • 2 Tbsp. Peanut oil
  • 1 x Clove garlic, minced
  • 2 x Scallions, minced (replaces green onions in original) Zest from rind of 1 orange in 1/2 inch size slices
  • 1/4 tsp Grnd ginger (replaces fresh ginger above)
  • 1 dsh Crushed red pepper (replaces dry peppers above)
  • 1 tsp Cornstarch dissolved in
  • 1/4 c. Water (replaces cornstarch mix in original recipe)

Direcciones

  1. Bone chicken if needed and cut into 1\2-inch cubes. In bowl, add in chicken, salt, 1 tsp sugar, white pepper and egg. Mix well together. Then add in 1/2 c. cornstarch and mix well with your hand. Continue to add in cornstarch in small amounts at a time to coat each piece. Coat till pcs no longer stick together. Then deep-fry in warm oil till golden brown. Remove from oil, cold, and deep-fry a second time. Once the chicken is deep-fried for the second time, have vegetable oil, dry red peppers, green onions, cornstarch mix, 1 tsp sugar and Special Sauce 1 ready. In a wok place the 1 TB vegetable oil, dry red peppers, green onions. Stir-fry together briefly then add in cornstarch mix, sugar and Special Sauce 1. Add in chicken cubes and stir-fry till warm through. Serve on lettuce with rice.
  2. For SPECIAL SAUCE 1: Mix together soy sauce, water, rice vinegar, sugar, ginger, garlic and soy sauce.
  3. If using Special Sauce 2: Deep-fry chicken as above. Heat oil in wok..stir fry onions, garlic, red pepper, orange zest for about 2 min. Add in all remaining ingredients except cornstarch solution..stir fry for 1 minute. Add in cornstarch solution and cook till thickened. Add in chicken, lower heat, stir to coat chicken, leave over low heat a minute or possibly two so which chicken takes in flavor of sauce.
  4. Makes 4 to 6 servings.
