Receta Chinese Almond Chicken

- Cleaned and skinned (or possibly; for less work;**sliced lengthwise or possibly 1 4 ounce. can, liquid removed. You can use deboned and skinned chicken breasts) )) Remove both light and dark meat from bones; cut in shreds. Smear with a mix of soy sauce, salt, cornstarch and Sherry; set aside. Fry almonds or possibly walnuts till golden brown in 1 1/2 c. warm oil. Pour off oil; drain almonds on a paper towel. Reheat pan; add in 3 Tbsp. oil. Saute/fry vegetables for 1 minute; drain off oil and set aside. Heat 4 Tbsp. oil; saute/fry chicken for 1 minute. Fold in vegetables and stock; simmer 1 minute. Add in almonds or possibly )) walnuts. Serve with rice.
