%20to%20a%20weekend%20%22on%20call%22%20for%20work,%20I%20was%20hankering%20for%20a%20good%20chinese%20seafood%20dinner.%3C/p%3E%3Cp%3EWith%20the%20rather%20poor%20options%20for%20eating%20out%20in%20our%20little%20town,%20the%20best%20alternative%20was%20to%20cook.%20So,%20popped%20into%20the%20local%20-%20very%20good%20-%20supermarket%20(Ferraro's%20Foods),%20I%20picked%20out%20the%20freshest%20bit%20of%20fish%20I%20could%20see.%20And%20it%20so%20happened%20to%20be%20sole,%20a%20lovely%20bit%20of%20finely%20textured%20white%20fish,%20perfect%20for%20steaming.%20And%20it%20was%20on%20%22special%22%20too!%20Yay!%3C/p%3E%3Cp%3EHmm...%20the%20fillet%20was%20a%20bit%20small,%20so%20quickly%20asked%20for%20a%20tub%20of%20Fanny%20Bay%20Oysters%20also%20on%20sale%20for%20$3.90.%20Yum,%20this%20would%20make%20a%20tasty%20combo.%3C/p%3E%3Cp%3EOnce%20home,%20it%20was%20a%20simple%20matter%20of%20cooking%20some%20fragrant%20Thai%20Jasmine%20rice%20in%20the%20microwave%20whilst%20the%20seafood%20was%20being%20prepared.%20In%20the%20time%20it%20took%20for%20the%20rice%20to%20cook,%20all%20the%20prep%20work%20plus%20steaming%20of%20the%20fish%20was%20done%20and%20all%20I%20had%20to%20do%20was%20to%20precisely%20time%20the%20frying%20of%20shallots%20and%20garlic%20and%20pour%20the%20resultant%20hot%20oil%20mixture%20over%20the%20fish%20with%20a%20very%20satisfying%20sizzle!%3C/p%3E%3Cp%3EThe%20fish%20was%20done%20just%20right,%20flaked%20beautifully,%20melt%20in%20mouth%20tenderness,%20the%20mild%20flavour%20served%20as%20a%20foil%20for%20the%20aromatic%20green%20herbs%20and%20crunchy%20onion%20and%20garlic%20bits.%20The%20oysters%20turned%20out%20better%20than%20expected%20-%20plump,%20juicy%20and%20still%20with%20a%20slight%20crunch.%20Again%20the%20fragrant%20oils%20and%20green%20herbs%20complemented%20the%20briny%20almost%20metallic%20taste%20of%20the%20bivalve.%3C/p%3E%3Cp%3EWould%20have%20gone%20very%20well%20with%20a%20chilled%20Riesling...%20but%20next%20time%20perhaps!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3Emake%20sure%20the%20fish%20has%20been%20thoroughly%20deboned,%20cut%20into%20large%20portions%20about%205x8cm%3C/p%3E%3Cp%3Elay%20fish%20in%20a%20heat%20proof%20dish%20(e.g.%20Pyrex)%3C/p%3E%3Cp%3Elay%20the%20shucked%20oysters%20over%20the%20fish,%20generously%20layering%20juliened%20ginger%20in%20between%20and%20over%20all%20the%20pieces%20of%20seafood%3C/p%3E%3Cp%3Ebring%20water%20to%20boil%20in%20the%20wok,%20and%20place%20dish%20with%20seafood%20onto%20a%20steaming%20rack,%20cover%20and%20steam%20at%20high%20heat%20for%205min%3C/p%3E%3Cp%3EWhilst%20fish%20is%20cooking,%20heat%20peanut%20oil%20in%20a%20saucepan,%20add%20dried%20onions%20and%20garlic%20to%20brown%20-%20this%20will%20take%20about%202%20min,%20so%20time%20it%20to%20coincide%20with%20the%20end%20of%20the%205min%20cooking%20time%20for%20the%20fish%3C/p%3E%3Cp%3EOnce%20fish%20is%20cooked,%20remove%20from%20steamer,%20drizzle%20with%20soy%20sauce,%20sprinkle%20with%20cilantro,%20spring%20onion%20and%20red%20chilli%20and%20pour%20the%20very%20hot%20oil%20over%20the%20whole%20assembly.%20(it%20was%20sizzle%20and%20spit!)%3C/p%3E%3Cp%3EServe%20immediately%20-%20Enjoy!%3C/p%3E){kind=link}
