- Simmer broth, mushrooms and spinach over medium heat 3 to 4 min. Stir together soy sauce, vinegar, pepper, sesame oil and warm chile oil in small bowl, then add in to broth. Taste and correct seasonings.
- Stir cornstarch into water till dissolved. Add in dissolved cornstarch and tofu to soup, stirring constantly till soup boils. Continue to cook till thickened, about 3 min.
- Garnish each serving with cilantro and green onion. Serve warm.
- Yields 6 (1-c.) servings.
