Ingredientes

  • 4 c. chicken broth
  • 1 c. sliced mushrooms
  • 1 c. small spinach leaves washed
  • 2 Tbsp. light or possibly mild soy sauce
  • 2 Tbsp. cider vinegar
  • 1/2 tsp freshly-grnd black pepper
  • 1 1/2 Tbsp. dark sesame oil
  • 1/4 tsp warm chile oil - (to 1/2 tspn)
  • 2 Tbsp. cornstarch
  • 3 Tbsp. water
  • 1/2 lb tofu diced
  • 2 Tbsp. chopped cilantro
  • 1 x green onion minced fine

Direcciones

  1. Simmer broth, mushrooms and spinach over medium heat 3 to 4 min. Stir together soy sauce, vinegar, pepper, sesame oil and warm chile oil in small bowl, then add in to broth. Taste and correct seasonings.
  2. Stir cornstarch into water till dissolved. Add in dissolved cornstarch and tofu to soup, stirring constantly till soup boils. Continue to cook till thickened, about 3 min.
  3. Garnish each serving with cilantro and green onion. Serve warm.
  4. Yields 6 (1-c.) servings.
