Receta Chinese Winter Soup

Ingredientes
- 4 c. chicken broth
- 1 c. sliced mushrooms
- 1 c. small spinach leaves washed
- 2 Tbsp. light or possibly mild soy sauce
- 2 Tbsp. cider vinegar
- 1/2 tsp freshly-grnd black pepper
- 1 1/2 Tbsp. dark sesame oil
- 1/4 tsp warm chile oil - (to 1/2 tspn)
- 2 Tbsp. cornstarch
- 3 Tbsp. water
- 1/2 lb tofu diced
- 2 Tbsp. chopped cilantro
- 1 x green onion minced fine
Direcciones
- Simmer broth, mushrooms and spinach over medium heat 3 to 4 min. Stir together soy sauce, vinegar, pepper, sesame oil and warm chile oil in small bowl, then add in to broth. Taste and correct seasonings.
- Stir cornstarch into water till dissolved. Add in dissolved cornstarch and tofu to soup, stirring constantly till soup boils. Continue to cook till thickened, about 3 min.
- Garnish each serving with cilantro and green onion. Serve warm.
- Yields 6 (1-c.) servings.
