.%20%20I%20used%20only%201%20package%20of%20tofu%20for%20the%20recipe,%20but%20still%20made%20the%20whole%20amount%20of%20sauce....mmmmmm.....and%20I%20didn't%20have%20actual%20chipotle%20chilies,%20so%20I%20used%20my%20chipotle%20powder.%20%20This%20was%20really%20a%20great%20sauce%20for%20the%20tofu....I'll%20make%20it%20again%20for%20sure%20:)%3C/p%3E%3Cp%3EToday%20I%20worked%20until%2012:30%20or%20so,%20and%20didn't%20have%20much%20time%20to%20make%20a%20lunch%20when%20we%20got%20home,%20but%20I%20was%20starving.%20%20I%20defrosted%20a%20couple%20of%20corn%20tortillas%20and%20created%20some%20tacos.%20Take%20a%20look:%3C/p%3E%3Cp%3ETanya's%20Quick%20Tacos:%3C/p%3E%3Cp%3EHeat%20up%20the%20rice%20and%20beans%20together.%20%20(I%20put%20them%20in%20the%20microwave%20for%20a%20minute)%20Mash%20them%20up%20well.%20%20Add%20the%20chipotle%20powder%20and%201/2%20tsp%20garlic%20powder.%20%20Mix%20well%20and%20sprinkle%20a%20little%20salt%20and%20pepper%20to%20taste.%20%20Mix.%20%20Spread%20the%20mixture%20onto%20the%202%20tortillas%20evenly%20down%20the%20middle.%20%20In%20a%20small%20bowl,%20add%20the%20tomatoes%20and%20cilantro%20and%20mix.%20%20Add%20the%201/2%20tsp%20garlic%20and%20salt%20&%20pepper%20to%20taste.%20%20Top%20the%20bean/rice%20mixture%20with%20the%20tomatoes.%20%20Eat!%3C/p%3E%3Cp%3EThis%20is%20a%20great%20recipe%20when%20you're%20in%20a%20hurry%20and%20you%20have%20leftover%20cooked%20rice%20and%20beans%20in%20the%20fridge.%3C/p%3E%3Cp%3EI%20bought%20some%20Vegan%20Gourmet%20Cheddar%20vegan%20%22cheese%22%20at%20the%20store%20the%20other%20day.%20%20It's%20ok.%20%20It%20says%20it%20melts%20right%20on%20the%20front,%20but%20I've%20been%20unsuccessful%20so%20far.%20%20It%20didn't%20melt%20on%20my%20hot%20chili%20and%20it%20didn't%20melt%20when%20I%20mixed%20it%20into%20rice%20in%20the%20microwave.....does%20anyone%20have%20any%20suggestions%20for%20that?%3C/p%3E%3Cp%3EStay%20tuned%20for%20my%20next%20post:%20SUPERBOWL!!!%3C/p%3E%3Cp%3EEat%20smart,%3C/p%3E%3Cp%3ET.%3C/p%3E%3Cp%3EQuick%20Tacos%3C/p%3E){kind=link}
