Ingredientes
- For the chicken:
- 1 whole (3 ½ to 4 lb) chicken, cut into 6 pieces or the equivalent amount of bone-in, skin-on chicken pieces
- 2 quarts cold water
- ½ cup salt
- ½ cup granulated sugar
- Freshly ground black pepper, to taste
- Canola oil, for grill
- For the sauce:
- 2-6 chipotles en adobo (seeded, if desired)
- 1 garlic clove, minced
- ½ cup ketchup
- 3 tablespoons cider vinegar
- 1 tablespoon Worcestershire sauce
- ¼ cup maple syrup
- 2 tablespoon unsalted butter
