- Wash chitterlings thoroughly and cover with boiling salted water; add in garlic and cayenne pepper and cook till tender, about 2 hrs.
- Drain chitterlings and cut into two-inch pcs; dip each piece into egg beaten with water and then into cracker crumbs.
- Fry in warm oil at 375-deg. F. till brown; drain on paper towels.
