.%20The%20cake%20was%20made%20with%20good%20quality%20valrhona%20dark%20chocolate%20with%2071%25%20cocoa%20content.%20It%20lent%20the%20cake%20a%20rich%20and%20intense%20bittersweet%20chocolaty%20flavour%20that%20suit%20our%20palates.%20The%20top%20of%20the%20cake%20was%20brushed%20with%20liquor,%20the%20recipe%20recommends%20brandy,%20but%20I%20experimented%20with%20kahlua.%20The%20taste%20was%20rather%20mild%20and%20no%20one%20could%20detect%20its%20presence.%20I%20will%20try%20with%20rum%20when%20I%20make%20this%20same%20cake%20for%20my%20baking%20friend,%20hope%20the%20liquor%20flavour%20would%20be%20more%20prominent.%20The%20dark%20and%20poke%20marked%20surface%20may%20not%20look%20visually%20appealing%20to%20most%20people,%20but%20somehow,%20I%20have%20a%20weak%20spot%20for%20rustic,%20crackly%20looking%20simple%20cakes.%20The%20photo%20of%20the%20cake%20caught%20my%20eye%20when%20I%20was%20flipping%20through%20the%20cookbook.%20I%20bookmarked%20the%20recipe%20right%20away,%20although%20I%20must%20confess%20my%20cake%20was%20a%20far%20cry%20from%20the%20one%20illustrated%20in%20the%20cookbook.%3C/p%3E%3Cp%3EAnother%20interesting%20ingredient%20that%20makes%20this%20cake%20special%20is%20the%20addition%20of%20whole%20chestnuts.%20I%20like%20the%20chocolate%20and%20chestnut%20combo%20since%20I%20love%20roasted%20chestnuts,%20especially%20those%20freshly%20roasted%20chestnuts%20from%20mobile%20roadside%20stalls(which%20sadly,%20can%20hardly%20be%20seen%20nowadays).%20My%20younger%20child%20who%20doesn't%20fancy%20chestnuts%20told%20me%20it%20is%20better%20to%20leave%20them%20out%20%5E%5E!%20Nevertheless,%20the%20dense%20but%20velvety%20texture%20of%20the%20cake%20made%20everyone%20craves%20for%20a%20second,%20bigger%20slice.%20My%20sensible%20kids%20practised%20'portion%20control'%20though...making%20sure%20there%20was%20enough%20leftovers%20for%20their%20breakfast%20the%20next%20day%20;)%3C/p%3E%3Cp%3EChocolate%20and%20Chestnuts%20Cake%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E(makes%20one%2018cm%20cake)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ELine%20base%20and%20side%20of%2018cm%20pan(with%20removable%20base)%20with%20parchment%20paper.%3C/p%3E%3Cp%3EMelt%20dark%20chocolate%20and%20butter%20in%20a%20bowl%20over%20a%20pan%20of%20simmering%20water%20(make%20sure%20the%20bowl%20is%20able%20to%20sit%20above%20the%20water%20and%20it%20should%20cover%20the%20pot%20so%20that%20steam%20will%20not%20get%20inside%20the%20bowl).%20Remove%20from%20heat.%20Let%20cool.%3C/p%3E%3Cp%3ESieve%20cocoa%20powder%20and%20cake%20flour,%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20clean,%20dry%20mixing%20bowl,%20beat%20egg%20whites%20with%20an%20electric%20handheld%20mixer%20on%20low%20speed%20until%20mixture%20becomes%20frothy%20and%20foamy.%20Add%20half%20of%20the%20sugar%20and%20turn%20to%20high%20speed%20and%20beat%20the%20mixture.%20Continue%20to%20add%20in%20the%20remaining%20sugar%20mixture%20and%20beat%20until%20the%20egg%20whites%20reaches%20the%20soft%20peak%20stage.%20The%20soft%20peak%20stage%20is%20reached%20when%20the%20peaks%20of%20the%20whites%20curl%20over%20and%20droop%20slightly.%20The%20egg%20whites%20should%20appear%20smooth%20and%20glossy.%20Set%20aside.%20(Do%20not%20over%20beat%20the%20whites%20still%20stiff,%20it%20is%20better%20to%20beat%20the%20whites%20still%20soft%20peaks%20for%20easy%20folding%20with%20the%20yolk%20batter.)%3C/p%3E%3Cp%3EPlace%20egg%20yolks%20and%20sugar%20in%20another%20mixing%20bowl.%20With%20the%20electric%20handheld%20mixer%20(Note:%20it%20is%20not%20necessary%20to%20wash%20the%20beaters/whisks%20after%20beating%20the%20egg%20whites),%20beat%20the%20mixture%20on%20low%20speed%20until%20it%20turns%20pale%20and%20thick.%3C/p%3E%3Cp%3EAdd%20in%20the%20melted%20chocolate%20and%20butter%20mixture,%20milk%20and%20vanilla%20extract,%20beat%20on%20low%20speed%20to%20combine.%20Sieve%20over%20the%20flour%20and%20cocoa%20powder,%20Fold%20with%20a%20spatula%20or%20balloon%20whisk%20until%20fully%20incorporated.%3C/p%3E%3Cp%3EFold%20the%20beaten%20egg%20whites%20into%20the%20egg%20yolk%20batter%20in%203%20separate%20additions,%20each%20time%20folding%20gently%20with%20a%20spatula%20(I%20prefer%20to%20use%20a%20balloon%20whisk)%20until%20just%20blended.%3C/p%3E%3Cp%3EAdd%20in%20the%20chestnuts,%20fold%20to%20combine.%3C/p%3E%3Cp%3EPour%20batter%20into%20prepared%20pan.%20Bake%20in%20preheated%20oven%20at%20160degC%20for%2045~50%20mins%20or%20until%20a%20skewer%20inserted%20into%20the%20centre%20comes%20out%20with%20a%20few%20moist%20crumb.%20Do%20not%20over%20bake.%3C/p%3E%3Cp%3ERemove%20cake%20from%20oven,%20brush%20top%20with%20brandy.%20Unmould,%20remove%20the%20parchment%20paper%20and%20let%20cool,%20right%20side%20up%20(do%20not%20invert)%20on%20wire%20rack.%20The%20cake%20tastes%20best%20when%20left%20over%20night%20at%20room%20temperature.%20If%20stored%20in%20fridge,%20bring%20the%20cake%20to%20room%20temperature%20before%20serving.%3C/p%3E%3Cp%3ERecipe%20source:%20adapted%20from%20%E8%87%AA%
