.%20So,%20when%20I%20saw%20that%20this%20month%E2%80%99s%20Daring%20Bakers%20challenge%20was%20to%20make%20sfogliatelle%20I%20was%20really%20excited.%20I%20knew%20exactly%20how%20they%20looked%20and%20how%20they%20tasted%20and%20all%20I%20had%20to%20do%20was%20figure%20out%20how%20to%20make%20them.%20We%20were%20also%20given%20a%20few%20mandatory%20Items:%20Sandie%20provided%20recipes%20for%20homemade%20ricotta%20cheese%20(so%20easy%20and%20so%20delicious),%20candied%20orange%20peel,%20sfogliatelle%20ricci%20and%20frolle%20dough.%20You%20must%20make%20the%20homemade%20cheese%20or%20the%20candied%20peel%20and%20at%20least%20one%20version%20of%20the%20sfogliatelle.%3C/p%3E%3Cp%3EI%20chose%20to%20make%20my%20own%20candied%20peel%20as%20I%20cannot%20buy%20commercial%20peel%20as%20it%20is%20full%20of%20sugar.%20My%20first%20attempt%20at%20the%20sfogliatelle%20was%20an%20absolute%20disaster.%20I%20think%20this%20had%20to%20do%20with%20the%20extreme%20heat%20we%20experienced%20on%20Sunday.%20I%20was%20not%20quite%20sure%20if%20I%20would%20get%20the%20recipe%20done%20in%20time%20for%20the%20reveal%20due%20to%20the%20time%20constraints%20of%20working%20and%20the%20amount%20of%20time%20the%20dough%20needs%20in%20the%20fridge.%20I%20was%20so%20relieved%20when%20last%20night%20I%20managed%20to%20get%20three%20sfogliatelle%20made.%20They%20might%20need%20to%20have%20been%20a%20bit%20thinner,%20but%20Dave%20and%20I%20both%20recognized%20the%20texture%20as%20being%20spot%20on!%20These%20are%20not%20easy%20to%20make,%20but%20I%20am%20so%20glad%20that%20I%20have%20achieved%20this.%20I%20hope%20you%20all%20enjoy%20my%20recipe%20for%20chocolate%20and%20orange%20sfogliatelle.%3C/p%3E%3Cp%3EChocolate%20And%20Orange%20Sfogliatelle%20Recipe%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPlace%20the%20flour,%20salt%20and%20water%20into%20a%20stand%20mixer%20and%20mix%20until%20combined%3C/p%3E%3Cp%3EKnead%20in%20the%20bowl%20until%20a%20firm%20dough%20forms%3C/p%3E%3Cp%3EDivide%20in%20two,%20and%20roll%20the%20dough%20out%20to%2010mm%20thick%20rough%20rectangle%20on%20your%20worktop%3C/p%3E%3Cp%3ELaminate%20through%20your%20pasta%20machine%20using%20the%20widest%20setting%20until%20smooth%20and%20it%20is%20the%20width%20of%20your%20pasta%20machine%3C/p%3E%3Cp%3EWrap%20each%20piece%20in%20cling%20film%20and%20leave%20to%20rest%20in%20the%20fridge%20for%202%20hours%3C/p%3E%3Cp%3ECream%20the%20butter%20for%20at%20least%205%20minutes,%20until%20soft%20and%20fluffy%3C/p%3E%3Cp%3EDivide%20each%20piece%20of%20dough%20into%202%20pieces%3C/p%3E%3Cp%3EDust%20one%20piece%20with%20flour%20and%20leave%20the%20others%20under%20a%20cloth%3C/p%3E%3Cp%3EPass%20each%20piece%20through%20the%20pasta%20machine%20starting%20from%20the%20widest%20setting%20and%20decreasing%20the%20roller%20settings%20until%20you%20get%20to%20the%20highest%20number%3C/p%3E%3Cp%3EPlace%20the%20strip%20of%20rolled%20out%20dough%20onto%20your%20worktop%20and%20using%20a%20spatula,%20spread%20a%20thin%20layer%20of%20butter%20onto%20the%20dough%3C/p%3E%3Cp%3ERoll%20into%20a%20tight%20roll,%20smoothing%20and%20tightening%20the%20dough%20with%20each%20full%20turn%3C/p%3E%3Cp%3ELeave%20the%20end%20unrolled%20to%20attach%20the%20next%20piece%20of%20dough%20onto%3C/p%3E%3Cp%3ERepeat%20with%20the%20other%20pieces%20and%20overlap%20one%20end%20onto%20the%20rolled%20up%20piece%20and%20continue%20rolling%3C/p%3E%3Cp%3EOnce%20all%20the%20dough%20has%20been%20rolled,%20use%20your%20fingers%20to%20smooth%20out%20the%20air%20pockets%20as%20much%20as%20you%20can%3C/p%3E%3Cp%3ECover%20the%20entire%20roll%20in%20butter,%20wrap%20in%20cling%20film%20and%20leave%20to%20rest%20in%20the%20fridge%20for%202%20hours%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20200%C2%B0%20Celsius%3C/p%3E%3Cp%3ELine%20a%20baking%20sheet%20with%20baking%20paper%3C/p%3E%3Cp%3ERemove%20the%20dough%20from%20the%20fridge%20and%20unwrap%3C/p%3E%3Cp%3ETrim%20the%20ends%20so%20that%20they%20are%20even%3C/p%3E%3Cp%3ECut%20off%2015mm%20slices%3C/p%3E%3Cp%3ETake%20one%20slice%20and%20using%20your%20thumb,%20push%20out%20from%20the%20centre%20in%20one%20direction,%20rotating%20and%20pushing%20until%20the%20dough%20is%20thin%20and%20a%20cone%20shape%20starts%20to%20form%3C/p%3E%3Cp%3EShape%20into%20a%20cone,%20using%20your%20thumbs%20on%20the%20inside,%20and%20your%20fingers%20on%20the%20outside,%20without%20separating%20the%20layers,%20if%20possible%3C/p%3E%3Cp%3EPlace%20the%20confectioner%E2%80%99s%20custard%20mix%20into%20the%20cone,%20leaving%20the%20edge%20free%3C/p%3E%3Cp%3ELightly%20press%20the%20opening%20so%20it%20is%20closed,%20but%20not%20sealed%3C/p%3E%3Cp%3EPlace%20onto%20your%20baking%20tray%20and%20repeat%20with%20the%20remaining%20slices%3C/p%3E%3Cp%3ELightly%20brush%20the%20remaining%20butter%20over%20the%20pastry%3C/p%3E%3Cp%3EBake%20for%2018%20minutes%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20leave%20to%20cool%20on%20a%20wire%20rack%3C/p%3E%3Cp%3ECooks%20Notes:%3C/p%3E%3Cp%3ETo%20make%20the
