%3C/p%3E%3Cp%3EThis%20is%20the%20level%20of%20decorating%20I%20could%20manage%20with%20my%20hungry%20flatmates%20hovering%20about%20me.%20Even%20this%20was%20a%20bargain%20to%20be%20honest%20:)%3C/p%3E%3Cp%3EI%20thought%20I'd%20make%20a%20simple%20chocolate%20cake%20for%20the%20day,%20since%20I'm%20not%20really%20celebrating,%20I%20wanted%20to%20keep%20the%20red%20and%20stuff%20to%20a%20minimum.%20And%20since%20I%20had%20an%20evening%20off,%20I%20just%20randomly%20made%20this%20cake%20I'd%20bookmarked%20long%20ago,%20mainly%20because%20it%20was%20the%20one%20that%20suited%20my%20ingredients%20in%20the%20fridge%20the%20best.%20I%20didn't%20have%20very%20high%20expectations,%20just%20thinking%20it'd%20be%20an%20ok,%20nice,%20normal%20chocolate%20cake.%20Especially%20considering%20the%20cake%20uses%20cocoa%20instead%20of%20chocolate.%20But%20this%20cake%20blew%20me%20away.%20It%20was%20gone%20within%20the%20hour,%20but%20I%20guess%20that's%20what%20happens%20when%20you're%20living%20in%20Uni.%20It%20was%20really%20really%20good,%20and%20super%20easy%20to%20make%20too.%3C/p%3E%3Cp%3EThe%20cake%20layers%20were%20extremely%20moist,%20the%20kinds%20you'll%20find%20at%20bakeries,%20and%20the%20egg%20yolk%20buttercream%20was%20super%20delicious,%20and%20since%20I'm%20not%20a%20fan%20of%20traditional%20buttercream,%20these%20SMBC%20sorts%20have%20become%20standard%20for%20me,%20and%20don't%20worry%20me%20anymore.%20I%20even%20made%20this%20one%20with%20just%20a%20hand%20mixer,%20I%20haven't%20bothered%20lugging%20Sir%20Mix%20a%20Lot%3C/p%3E%3Cp%3Eall%20the%20way%20since%20it's%20just%20a%20year's%20course.%20And%20it's%20topped%20off%20with%20a%20standard%20ganache.%20All%20the%20components%20on%20their%20own%20are%20pretty%20standard,%20but%20they%20come%20together%20to%20make%20the%20awesome%20cake.%20I%20love%20coffee,%20so%20the%20espresso%20is%20a%20welcome%20addition%20too.%3C/p%3E%3Cp%3EHow%20to%20use%20a%20candy%20thermometer%20in%20a%20teeny%20tiny%20saucepan%3C/p%3E%3Cp%3EChocolate%20Cake%20with%20Espresso%20Buttercream%3C/p%3E%3Cp%3ERecipe%20from%20Oprah.com%20via%20My%20Baking%20Addiction%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EFor%20the%20cake%20-%3C/p%3E%3Cp%3EEquipment%20needed%20-%3C/p%3E%3Cp%3ECandy%20ThermometerElectric%20Mixer%20(Stand%20Mixer%3C/p%3E%3Cp%3Epreferred)%3C/p%3E%3Cp%3EInstructions%20-%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20F%20[180%20C].%20Grease%20and%20line%20two%208%20inch%20round%20pans.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20whisk%20together%20the%20sugar,%20flour,%20cocoa,%20baking%20powder,%20baking%20soda%20and%20salt.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20the%20eggs,%20milk,%20oil,%20and%20vanilla%20extract.%20Stir%20well,%20and%20gradually%20incorporate%20into%20the%20flour%20mixture,%20until%20just%20mixed.%20Add%20the%20hot%20water,%20and%20stir%20till%20blended.%3C/p%3E%3Cp%3EPour%20into%20prepared%20pans,%20and%20bake%20for%2025%20minutes,%20until%20a%20wooden%20skewer%20inserted%20comes%20out%20clean.%20Cool%20on%20racks.%3C/p%3E%3Cp%3EButtercream%20-%20In%20a%20large%20bowl,%20whisk%20the%20egg%20yolks%20vigorously,%20about%205%20minutes,%20until%20they%20become%20ribbon%20like%20and%20pale%20and%20fluffy.%20In%20the%20meanwhile,%20(or%20later%20if%20you%20can't%20manage%20both%20at%20the%20same%20time),%20combine%20the%20sugar%20and%20the%20water,%20and%20boil%20until%20mixture%20reaches%20238%20F%20on%20a%20candy%20thermometer.%3C/p%3E%3Cp%3EOnce%20the%20sugar%20reaches%20the%20temperature,%20pour%20it%20in%20a%20slow%20steady%20stream%20into%20the%20yolks,%20with%20the%20mixer%20on,%20making%20sure%20to%20incorporate%20while%20pouring.%20Continue%20beating%20mixture%20until%20it%20comes%20down%20to%20room%20temperature%20and%20is%20light%20and%20fluffy,%20about%2010%20minutes.%3C/p%3E%3Cp%3ENow%20begin%20adding%20the%20butter,%20one%20tablespoon%20at%20a%20time,%20beating%20well%20between%20each%20addition.%20The%20mixture%20might%20curdle%20somewhere%20along%20the%20process,%20just%20continue%20beating%20till%20it%20comes%20together,%20and%20then%20go%20on%20with%20adding%20the%20butter,%20until%20it's%20all%20added.%20Dissolve%20the%20espresso%20powder%20in%20hot%20water,%20and%20beat%20into%20the%20buttercream.%20Set%20aside.%3C/p%3E%3Cp%3EGanache%20-%20In%20a%20large%20bowl,%20combine%20the%20chopped%20chocolate%20and%20butter.%20In%20a%20smaller%20bowl,%20boil%20together%20the%20cream%20and%20sugar%20just%20until%20it%20boils,%20and%20immediately%20pour%20into%20the%20chocolate%20mixture.%20Stir%20until%20chocolate%20is%20completely%20smooth.%20Set%20aside%20to%20cool%20for%20about%2010%20minutes%20so%20that%20it%20thickens%20slightly.%3C/p%3E%3Cp%3EAssembly%20-%20Remove%20parchment%20papers%20from%20the%20cake%20layers,%20and%20split%20into%20two%20using%20a%20large%20serrated%20knife.%20Alternately%20lay%20down%20the%20layers%20and%20the%20buttercream%20onto%20a%20cake%20plate,%20using%201/3rd%20of%20the%20buttercream%20e
