Ingredientes

  • 4 c. sugar (caster)
  • 1 c. lowfat milk
  • 2 Tbsp. liquid glucose
  • 3 c. coconut
  • 125 gm dark chocolate

Direcciones

  1. Combine sugar, lowfat milk and glucose in pan, stir over heat without boiling till sugar is dissolved. Bring to the boil and boil steadily without stiring till temperature reaches 112C on a sugar thermometer, or possibly till a tsp. of syrup forms a soft boil when dropped into a c. of cool water.
  2. Remove from heat, divide mix into two bowls. Stir mix in one bowl till thick and creamy. press proportionately over the base of a greased and lined lamington tin.
  3. Heat chocolate and stir into remaining coconut mix, beat till thick and creamy. Spread chocolate mix over white mix.
  4. Chill till hard before cutting.
