Receta Chocolate-Coconut Macaroons...
My car suffered a recent stroke or something very similar. When it wouldn't start I informed the mister he was up at bat. And while he dealt with the car surgeon, I made Chocolate-Coconut Macaroons. I was already eating my third cookie by the time he was finished. Which means these cookies are extremely easy and fast to make and/or the mister is extremely slow at talking to car people...long story short, my car has been resuscitated and the mister thinks he walks on water.
These are slightly crispy on the outside and chewy on the inside - sweet chocolate flavor marries the coconut...a match made in Heaven! You're going to love these! 5 dangs worth!
- CHOCOLATE-COCONUT MACAROONS
- 1 (14 oz.) can sweetened condensed milk
- 1 egg white
- 2 teaspoons vanilla extract
- 1 teaspoons almond extract
- 1/3 cup cocoa powder
- 1 bag (14 oz.) flaked coconut
- Preheat oven to 325 degrees. Line baking sheets with foil and
- grease and flour foil or use Silpat sheets. Set aside. In large bowl,
- combine sweetened condensed milk, egg white, vanilla and almond
- extracts. Stir in cocoa powder and then coconut. Drop by rounded tablespoonfuls, about the size of golf balls, onto prepared
- baking sheets; with back of spoon, slightly flatten each mound. Bake
for 17 to 20 minutes or until golden. Remove from baking sheets; cool on wire racks. Makes about 24 cookies.
