%20and%20I%20thought%20it%20was%20delicious%20but%20I%20am%20still%20in%20search%20of%20my%20all%20time%20favorite%20chocolate%20cupcake.%20%20The%20moistness%20was%20there,%20the%20flavor%20was%20there%20(the%20flavor%20was%20fabulous),%20I%20just%20want%20a%20little%20more%20height%20and%20airiness!%3C/p%3E%3Cp%3EThese%20cupcakes%20are%20filled%20with%20a%20caramel%20sauce%20that%20is%20thick%20and%20delicious%20and%20there%20is%20a%20slight%20hint%20of%20saltiness.%3C/p%3E%3Cp%3EI%20used%20Maldon%20salt%20flakes%20and%20so%20there%20is%20also%20the%20occasional%20surprise%20crunch%20from%20one%20of%20the%20flakes.%20Delicious!%20%20If%20you%20don't%20have%20Maldon%20salt,%20you%20can%20use%20your%20favorite%20sea%20salt.%20%20I%20think%20that%20a%20flake%20or%20courser%20salt%20would%20give%20a%20better%20texture%20but%20the%20flavor%20would%20definitely%20still%20be%20there%20with%20a%20finer%20salt.%3C/p%3E%3Cp%3EWe%20all%20know%20what%20my%20favorite%20part%20of%20the%20cupcake%20was.....the%20swiss%20meringue%20buttercream!%20%20Not%20just%20my%20plain%20buttercream%20either.....no%20sir,%20I%20mixed%20in%20some%20of%20that%20gooey%20salted%20caramel.%20%20Best%20buttercream%20EVER!%20%20Top%20that%20off%20with%20a%20bite%20size%20toffee%20bar%20and%20a%20drizzle%20of%20some%20more%20caramel....PERFECTION!%3C/p%3E%3Cp%3EChocolate%20Cupcakes%20with%20Salted%20Caramel%20-%20An%20Affair%20To%20Remember%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20F.%3C/p%3E%3Cp%3EIn%20a%20medium-sized%20mixing%20bowl%20or%20the%20bowl%20of%20a%20stand%20mixer,%20mix%20butter%20and%20sugar%20until%20fully%20combined.%20The%20end%20result%20should%20look%20like%20wet%20sand.%3C/p%3E%3Cp%3EMelt%20the%20chocolate%20in%20the%20microwave%20or%20in%20a%20double%20boiler.%20%20Once%20the%20melted%20chocolate%20is%20cool%20enough%20to%20touch,%20add%20it%20to%20the%20butter/sugar%20mixture%20and%20mix%20until%20just%20combined.%20%20Mix%20in%20eggs%20and%20egg%20yolks%20one%20at%20a%20time%20until%20just%20combined.%20%20Mix%20in%20oil,%20vanilla,%20and%20sour%20cream%20until%20just%20combined.%3C/p%3E%3Cp%3ESift%20together%20flour,%20salt,%20baking%20soda,%20and%20cocoa%20powder%20into%20a%20separate%20medium-sized%20bowl.%20Use%20a%20fork%20or%20a%20whisk%20to%20ensure%20that%20the%20ingredients%20are%20mixed%20well%20after%20sifting.%20%20Add%20dry%20ingredients%20to%20wet%20ingredients%20in%20three%20additions,%20mixing%20until%20just%20combined%20after%20each%20addition.%20%20Mix%20in%20water%20until%20just%20combined.%3C/p%3E%3Cp%3EFill%20cupcake%20liners%202/3%20full%20and%20bake%20for%2016-18%20minutes%20or%20until%20a%20toothpick%20inserted%20into%20the%20center%20of%20a%20cupcake%20should%20come%20out%20clean.%3C/p%3E%3Cp%3E2%20cups%20granulated%20sugar%3C/p%3E%3Cp%3E12%20tablespoons%20unsalted%20butter,%20at%20room%20temperature,%20cut%20into%20pieces%3C/p%3E%3Cp%3E1%20cup%20heavy%20cream,%20at%20room%20temperature%3C/p%3E%3Cp%3E1%20tablespoon%20fleur%20de%20sel%20or%20Maldon%20sea%20salt%20flakes%3C/p%3E%3Cp%3EFirst,%20make%20sure%20you%20have%20all%20of%20the%20ingredients%20ready.%20Once%20you%20start%20the%20caramel%20sauce%20you%20have%20to%20pay%20close%20attention%20so%20you%20don't%20burn%20it.%20To%20begin,%20heat%20the%20sugar%20over%20medium%20high-heat%20in%20the%20bottom%20of%20a%20heavy%202-3%20quart%20saucepan.%20When%20the%20sugar%20starts%20to%20melt,%20start%20whisking%20the%20sugar.%20The%20sugar%20will%20clump%20up,%20but%20keep%20whisking.%20It%20will%20continue%20to%20melt.%20When%20the%20sugar%20is%20melted,%20stop%20whisking.%20You%20can%20swirl%20the%20pan%20to%20move%20the%20sugar%20around.%3C/p%3E%3Cp%3EContinue%20cooking%20the%20sugar%20until%20it%20reaches%20a%20deep%20amber%20color.%20Make%20sure%20you%20watch%20the%20pan%20very%20closely.%20This%20is%20where%20it%20is%20easy%20to%20burn%20the%20caramel.%20You%20want%20the%20caramel%20to%20reach%20350%20degrees%20F.%20If%20you%20are%20new%20to%20making%20caramel,%20I%20suggest%20using%20a%20thermometer.%3C/p%3E%3Cp%3EAs%20soon%20as%20the%20sugar%20reaches%20the%20dark%20amber%20color,%20carefully%20add%20the%20butter.%20Whisk%20until%20butter%20is%20melted.%20If%20the%20sugar%20gets%20stuck%20to%20the%20whisk,%20you%20can%20switch%20to%20a%20wooden%20spoon.%3C/p%3E%3Cp%3ERemove%20the%20pan%20from%20the%20heat%20and%20slowly%20pour%20in%20the%20heavy%20cream.%20Whisk%20until%20cream%20is%20incorporated%20and%20caramel%20is%20smooth.%20Whisk%20in%20the%20fleur%20de%20sel%20or%20Maldon%20sea%20salt%20flakes.%3C/p%3E%3Cp%3ELet%20the%20caramel%20sauce%20cool%20for%20about%2010%20minutes%20in%20the%20pan.%20Pour%20the%20caramel%20into%20a%20large%20jar%20and%20cool%20to%20room%20temperature.%20Put%20the%20salted%20caramel%20sauce%20in%20the%20refrigerator.%20Store%20the%20salted%20caramel%20sauce%20in%20the%20refrigerator%20for%20about%20a%20month.%3C/p%3E%3Cp%3ECaramel%20Swiss%20Meringue%20Buttercream:%20adapted%20from%20marthastewart.com%3C/p%3E
