%20.%20This%20is%20the%20ONLY%20cake%20he%20has%20wanted%20for%20the%20last%20three%20years%20on%20his%20birthday.%20I%20made%20it%20once%20for%20Valentine's%20Day%20and%20his%20birthday...it%20was%20a%20lot%20of%20cake%20to%20make%20within%202%20weeks%20of%20each%20other...so%20now%20it's%20usually%20just%20his%20birthday%20cake.%20I%20have%20also%20made%20mini%20versions%20of%20this%20cake%20in%20mini-spring%20form%20pans%20for%20a%20friend%20after%20she%20gave%20birth!%20Too%20cute%20in%20mini!%3C/p%3E%3Cp%3EChocolate%20Ganache%20Cake%3C/p%3E%3Cp%3ETaste%20of%20Home%20Magazine%20Feb/March%202007%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl,%20cream%20butter%20and%20sugar%20until%20light%20and%20fluffy.%20%20Add%20egg%20and%20vanilla;%20beat%20for%202%20minutes.%20%20Combine%20buttermilk%20and%20sour%20cream%20in%20a%20separate%20bowl.%20Combine%20the%20flour,%20cocoa,%20baking%20soda%20and%20salt%20in%20a%20third%20bowl;%20add%20to%20creamed%20mixture%20alternating%20with%20buttermilk%20mixture,%20beating%20well%20after%20each%20addition.%3C/p%3E%3Cp%3EPour%20batter%20into%20two%20greased%20and%20waxed%20paper%20lined%209%20inch%20pans.%20(I%20usually%20use%20brown%20paper%20grocery%20bags%20or%20parchment%20paper.%20Just%20trace%20around%20the%20outside%20of%20the%20pan%20onto%20the%20paper,%20cut%20them%20out%20and%20voila!)%3C/p%3E%3Cp%3EBake%20at%20350%20degrees%20for%2020-25%20minutes%20or%20until%20a%20toothpick%20comes%20out%20clean.%20Cool%20for%2010%20minutes;%20remove%20from%20pans%20to%20wire%20racks%20to%20cool%20completely.%3C/p%3E%3Cp%3ESo,%20while%20the%20cake%20is%20baking,%20start%20preparing%20the%20chocolate%20whipped%20cream%20mousse%20filling.%3C/p%3E%3Cp%3EFilling:%3C/p%3E%3Cp%3E4%20oz%20semisweet%20chocolate%20(eyeball%201/3%20bag%20of%20semisweet%20chocolate%20chips)%3C/p%3E%3Cp%3E1%20cup%20heaving%20whipping%20cream%3C/p%3E%3Cp%3E1/2%20tsp%20vanilla%20extract%3C/p%3E%3Cp%3EMelt%20chocolate,%20with%20the%20cream%20over%20low%20heat.%20Stirring%20almost%20constantly.%20(ok%20how%20vague%20is%20that?%20I%20have%20done%20this%20two%20ways...I%20have%20melted%20the%20chocolate%20with%20the%20cream%20in%20a%20pyrex%20bowl%20set%20over%20a%20pan%20of%20simmering%20water,%20just%20make%20sure%20the%20pyrex%20isn't%20immersed%20in%20the%20water%20in%20the%20pan...it%20will%20cause%20the%20chocolate%20to%20get%20too%20hot.%20My%20latest%20way%20to%20do%20this%20is%20with%20a%20butter%20melting%20pot%20I%20got%20for%20our%20wedding,%20it%20is%20my%20most%20favorite%20little%20pan!%20It%20works%20perfectly%20for%20the%20filling%20and%20the%20glaze%20of%20this%20cake).%3C/p%3E%3Cp%3EOnce%20chocolate%20is%20melted,%20remove%20from%20heat,%20stir%20in%20vanilla%20and%20transfer%20to%20a%20small%20mixing%20bowl.%20Chill%20until%20slightly%20thickened.%20(%20Chill%20for%20at%20least%2030%20minutes%20I've%20found,%20you%20want%20it%20to%20be%20cold%20enough%20to%20whip%20up%20into%20a%20nice%20texture)%20Once%20cooled,%20beat%20on%20medium%20speed%20until%20light%20and%20fluffy.%20(This%20could%20take%20awhile,%20keep%20going%20with%20it,%20it's%20obvious%20once%20the%20consistency%20changes).%20Chill%20again%20until%20mixture%20gets%20thick%20enough%20to%20spread.%3C/p%3E%3Cp%3EGlaze%3C/p%3E%3Cp%3E8%20oz%20semisweet%20chocolate%20(the%20rest%20of%20the%20bag%20of%20semisweet%20chips)%3C/p%3E%3Cp%3E1/4%20cup%20butter,%20cubed%20(unsalted)%3C/p%3E%3Cp%3E3/4%20cup%20heavy%20whipping%20cream%3C/p%3E%3Cp%3EMelt%20chocolate%20and%20butter.%20Gradually%20add%20cream;%20heat%20until%20just%20warmed.%20(Add%20a%20little%20cream,%20stir%20until%20incorporated,%20then%20add%20a%20little%20more%20cream%20and%20reapeat%20until%20all%20nice%20and%20smooth)%20Chill%20this%20mixture%20until%20slight%20thickened.%20(This%20makes%20a%20lot%20of%20glaze,%20use%20as%20much%20as%20you%20like%20when%20you%20assemble%20the%20cake)%3C/p%3E%3Cp%3EPlace%20one%20cake%20layer%20on%20a%20serving%20plate;%20spread%20with%20filling.%20Top%20with%20remaining%20cake%20layer.%20Slowly%20pour%20glaze%20over%20the%20top%20of%20the%20cake.%20Keep%20refrigerated%20until%20ready%20to%20serve!%3C/p%3E%3Cp%3EHints:%3C/p%3E%3Cp%3EYou%20can%20freeze%20your%20leftover%20buttermilk!%3C/p%3E%3Cp%3E1%20pint%20of%20whipping%20cream%20is%20all%20you%20need%20for%20this%20entire%20recipe%3C/p%3E%3Cp%3EIf%20you%20try%20it,%20please%20let%20me%20know!%20It's%20worth%20it,%20I%20promise!%3C/p%3E){kind=link}
