%20-%20i%20learned%20a%20lot%20about%20coffee.%20i%20had%20always%20been%20a%20coffee%20drinker%20but%20that%20was%20the%20time%20in%20my%20life%20i%20really%20fell%20in%20love%20with%20it.%20maybe%20it%20had%20something%20to%20do%20with%20coffee%20was%20the%20only%20thing%20keeping%20me%20alive%20in%20those%20days!%20who%20am%20i%20kidding%20-%20it%20still%20is.%3C/p%3E%3Cp%3Emy%20grandma%20taught%20me%20to%20drink%20coffee.%20the%20rules%20were%20simple%20-%20nothing,%20and%20i%20mean%20nothing%20-%20was%20to%20go%20in%20the%20cup%20besides%20coffee.%20if%20you%20could%20see%20through%20the%20coffee%20-%20it%20was%20too%20weak%20and%20was%20deemed%20to%20be%20crap.%20milk%20and/or%20cream%20was%20out%20of%20the%20question%20as%20well.%20she%20taught%20me%20that%20nothing%20was%20worth%20drinking%20except%20a%20good%20thick%20dark%20cup%20of%20coffee.%20grandma%20could%20love%20our%20espresso%20machine!%3C/p%3E%3Cp%3Eshe%20also%20had%20opinions%20about%20dunking%20stuff%20in%20coffee%20-%20it%20was%20out%20of%20the%20question.%20she%20would%20usually%20have%20something%20-%20like%20a%20cookie%20-%20with%20her%20coffee%20but%20it%20was%20never%20dunked%20into%20the%20coffee.%3C/p%3E%3Cp%3Ewhile%20working%20at%20the%20coffee%20shop%20i%20discovered%20biscotti.%20at%20first%20-%20it%20felt%20like%20a%20betrayal%20to%20grandma%20-%20but%20i%20reasoned%20that%20if%20she%20had%20ever%20had%20a%20biscotti%20she%20would%20quickly%20change%20her%20coffee%20rules.%20at%20the%20shop,%20we%20had%20a%20raspberry%20chocolate%20white%20chocolate%20biscotti%20and%20it%20was%20to%20die%20for.%20the%20raspberry%20flavor%20was%20subtle%20-%20the%20chocolate%20tasted%20like%20chocolate%20and%20the%20little%20bits%20of%20white%20chocolate%20would%20melt%20a%20little%20bit%20in%20the%20coffee.%20i%20have%20always%20wanted%20to%20find%20a%20recipe%20that%20would%20come%20close%20to%20these%20biscotti%20but%20never%20have.%3C/p%3E%3Cp%3Ei%20was%20on%20david%20lebovitz's%20site%20one%20day%20and%20i%20came%20across%20his%20chocolate%20biscotti%20recipe.%20the%20biscotti%20looked%20amazing%20-%20so%20close%20to%20what%20i%20remember%20from%20the%20coffee%20shop.%20when%20i%20looked%20through%20the%20recipe%20i%20noticed%20that%20there%20was%20almond%20extract%20so%20i%20figured%20i%20could%20sub%20out%20the%20almond%20for%20raspberry%20extract%20and%20maybe%20get%20close%20to%20the%20biscotti%20i%20loved%20so%20much.%3C/p%3E%3Cp%3Ethese%20biscotti%20came%20dangerously%20close%20to%20what%20i%20wanted.%20the%20chocolate%20flavor%20was%20intense%20-%20the%20white%20chocolate%20chunks%20added%20some%20good%20texture%20-%20but%20the%20raspberry%20flavor%20didn't%20come%20through%20as%20much%20as%20i%20had%20hoped.%20the%20addition%20of%20the%20espresso%20powder%20was%20good-%20it%20really%20enhanced%20the%20chocolate.%20all%20in%20all%20-%20these%20biscotti%20are%20amazing%20-%20and%20so%20close%20to%20what%20i%20hoped%20they%20would%20be.%3C/p%3E%3Cp%3Ei%20have%20not%20given%20up%20my%20quest%20for%20my%20perfect%20biscotti%20recipe%20but%20these%20will%20do%20nicely%20until%20i%20find%20it.%3C/p%3E%3Cp%3Echocolate%20white%20chocolate%20biscotti%3C/p%3E%3Cp%3Eadapted%20from%20david%20lebovitz%3C/p%3E%3Cp%3E1.%20Preheat%20the%20oven%20to%20350F%20degrees.%3C/p%3E%3Cp%3E2.%20In%20a%20small%20bowl,%20sift%20together%20the%20flour,%20cocoa%20powder,%20baking%20soda,%20and%20salt.%3C/p%3E%3Cp%3E3.%20In%20a%20large%20bowl,%20beat%20together%20the%203%20eggs,%20sugar,%20espresso%20powder%20and%20vanilla%20&%20raspberry%20extracts.%20Gradually%20stir%20in%20the%20dry%20ingredients,%20then%20mix%20in%20the%20white%20chocolate%20until%20the%20dough%20holds%20together.%3C/p%3E%3Cp%3E4.%20Line%20a%20baking%20sheet%20with%20parchment%20paper%20or%20a%20silicone%20mat.%20Divide%20the%20dough%20in%20half.%20On%20a%20lightly%20floured%20surface,%20roll%20the%20dough%20into%20two%20logs%20the%20length%20of%20the%20baking%20sheet.%20Transfer%20the%20logs%20onto%20the%20baking%20sheet,%20evenly%20spaced%20apart.%3C/p%3E%3Cp%3E5.%20Gently%20flatten%20the%20tops%20of%20the%20logs.%20Beat%20the%20remaining%20egg%20and%20brush%20the%20tops%20of%20the%20logs%20liberally%20with%20the%20egg.%20(You%20won't%20use%20it%20all).%20Sprinkle%20the%20tops%20with%20the%20turbinado%20and%20bake%20for%2025%20minutes,%20until%20the%20dough%20feels%20firm%20to%20the%20touch.%3C/p%3E%3Cp%3E6.%20Remove%20the%20cookie%20dough%20from%20the%20oven%20and%20cool%2015%20minutes.%20On%20a%20cutting%20board,%20use%20a%20serrated%20bread%20knife%20to%20diagonally%20cut%20the%20cookies%20into%201/2-inches%20slices.%20Lay%20the%20cookies%20cut%20side%20down%20on%20baking%20sheets%20and%20return%20to%20the%20oven%20for%2020%20to%2030%20minutes,%20turning%20the%20baking%20sheet%20midway%20during%20baking,%20until%20the%20cookies%20feel%20mostly%20firm.%3C/p%3E%3Cp%3EOnce%20baked,%20cool%20the%20cookies%20completely%20then%20store%20in%20an%20airtight%20container%20for%20up%20to%20two%20
