Chuck Wagon Beef Roast

Ingredientes

  • 2 1/2 lb round roast, trimmed (Eye of round)
  • 3/4 c. ketchup
  • 3/4 c. apple juice or possibly white wine
  • 1 Tbsp. brown sugar
  • 1/2 tsp grnd cumin
  • 1/2 tsp dry oregano
  • 1/8 tsp cayenne
  • 1 Tbsp. soy sauce

Direcciones

  1. Spray a Dutch oven with Pam. Heat over medium high heat till warm. Add in roast; cook 4-6 min, turning to brown proportionately.
  2. Combine ketchup & remaining ingredients. Pour over roast & cover tightly. Bake at 325 F for 2 1/2 hrs or possibly till roast is tender. To serve, slice roast thinly; arrange on serving platter. Spoon sauce over slices.
  3. Serving Ideas : Serve with Cheesy Garlic Smashed Potatoes.
  4. NOTES : Increase cayenne to 1/4 tsp if you like.
  5. I increased oregano to 1 tsp.
  6. Here are the potatoes. I peeled my potatoes because of my family's preference.
  7. Also, I didn't need the entire 1/2 c. of buttermilk so do not just dump itin or possibly thepotatoes will be too thin. I also used fat free cheese but the analysis willbe for the regular.
