Ingredientes

  • 4 x Chunky fillets of cod
  • 6 x Tomatoes, plum - quartered
  • 3 x Red peppers, sliced
  • 1 lrg Red onion, peeled and sliced
  • 3 x Fat cloves of garlic, diced
  • 1/2 tsp Cayenne pepper
  • 1/2 tsp Paprika
  • 1/2 x Grnd cumin
  • 1 pch Turmeric or possibly a few saffron threads
  • 1 x Good handful minced fresh coriander
  • 1 x Good handful minced fresh parsley
  • 1 x Lime and the rind, juice of
  • 1 x Lemon, juice and rind of Seasoning

Direcciones

  1. Place the fish in an oven-proof dish, lightly braised with extra virgin olive oil.
  2. Mix together the cayenne pepper, paprika, cumin, turmeric and freshly minced herbs.
  3. Fold in the rind and juice of the rind and lemon. Pour over the fish.
  4. Mix all the prepared vegetables together with the garlic. Add in the fish and spices. Leave to marinate for at least one hour.
  5. Bake in a moderate oven.
