Receta Chunky Spiced Cod

Ingredientes
- 4 x Chunky fillets of cod
- 6 x Tomatoes, plum - quartered
- 3 x Red peppers, sliced
- 1 lrg Red onion, peeled and sliced
- 3 x Fat cloves of garlic, diced
- 1/2 tsp Cayenne pepper
- 1/2 tsp Paprika
- 1/2 x Grnd cumin
- 1 pch Turmeric or possibly a few saffron threads
- 1 x Good handful minced fresh coriander
- 1 x Good handful minced fresh parsley
- 1 x Lime and the rind, juice of
- 1 x Lemon, juice and rind of Seasoning
Direcciones
- Place the fish in an oven-proof dish, lightly braised with extra virgin olive oil.
- Mix together the cayenne pepper, paprika, cumin, turmeric and freshly minced herbs.
- Fold in the rind and juice of the rind and lemon. Pour over the fish.
- Mix all the prepared vegetables together with the garlic. Add in the fish and spices. Leave to marinate for at least one hour.
- Bake in a moderate oven.
