Ingredientes

  • 2 lb beef stew meat, cut in to 1 inch cubes
  • 2 tsp vegetable oil (I use olive)
  • 3 c. apple cider
  • 2 tsp cider vinegar
  • 1/4 x to 1/2 t dry thyme
  • 2 tsp salt, optional
  • 1/4 tsp pepper
  • 3 med potatoes, peeled and cubed
  • 4 med carrots, cut into 3/4 inch pcs
  • 3 x celery ribs, cut into 3/4 inch pcs
  • 2 med onions, cut into wedges
  • 1/4 c. all-purpose flour
  • 1/4 c. water

Direcciones

  1. In a Dutch oven, brown beef in oil; drain. Add in cider, vinegar, salt if you like, thyme and pepper; bring to a boil. Reduce heat; cover and simmer for 1 1/4 hrs. Add in potatoes, carrots, celery and onions; return to a boil. Reduce heat; cover and simmer for 30-35 min or possibly till beef and vegetables are tender. Combine flour and water till smooth; stir into stew. Bring to a boil; boil and stir for 2 min. 8 servings.
  2. Note: You can add in more potatoes and use baby carrots instead of regular carrots. You may also add in peas.
