- 1/4 cup water, if needed
- salt and pepper, to taste

- 1 cup cooked chicken breast, cut into bite sized pieces
- 6 large lettuce leaves
- 1 avocado, peeled and sliced
- 2 gluten-free corn tortillas
- 2 tablespoons olive oil
