Ingredientes

  • 2 tsp extra virgin olive oil
  • 2 med onions, minced finely
  • 4 clv garlic, chopped
  • 3 c. vegetable stock
  • 2 Tbsp. apple cider vinegar
  • 1 lrg bay leaf, crushed #
  • 5 whl allspice berries #
  • 2 tsp salt or possibly herbal substitute
  • 3 Tbsp. chili pwdr
  • 1 tsp carob pwdr (or possibly cocoa)
  • 2 c. low sodium tomato sauce
  • 1/2 tsp cayenne pepper, or possibly to taste
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 2 c. cooked pinto beans
  • 2 c. tofu, frzn, thawed, and crumbled

Direcciones

  1. In large heavy pot, over medium-high heat, heat oil and saute/fry onions for 8 to 10 min. Add in remaining ingredients. Bring to a boil, then lower heat and simmer for 1 1/2 hrs. Add in toppings of choice (see below).
