Ingredientes

  • new jersey sweet potatoes,or red ones
  • 1 red pepper
  • 1 green pepper
  • 1/2 purple onion
  • cooked turkey meat or ham cubed
  • 8 eggs
  • pinch salt,pepper
  • 3 pinches of fresh french terragon
  • 2 pinches parm cheese

Direcciones

  1. 6 sweet potatoes,new jersey I prefer,but any kind will do
  2. thinnly sliced,cooked slightly in microwave,ahead of time
  3. chop onion,peppers,saute till tender,in a little olive oil
  4. add about 2 cups chopped turkey or ham,little salt,pepper,fresh or dried terragon,pinch of parm cheese,then add potatoes cooking till slightly golden,then add the eggs and scramble till cooked
  5. serve with some fresh fruit/greek yougart and whole wheat toast
