Ingredientes

  • 4 sm shallot, chopped
  • 1/2 c. white wine vinegar
  • 1/2 c. white wine black pepper
  • 250 gm unsalted butter juice from half a lemon

Direcciones

  1. Combine the vinegar, wine and shallots in a saucepan over a low heat. Reduce till the liquid is almost dry. Then, add in the butter one Tbsp. at a time, whisking between each addition. Don't add in the butter too quickly. Once all the butter is added, pour in the lemon juice to taste, whisking continuously. Season and keep the sauce hot over a bain marie.
  2. Preparation time is 20 min.
