- For the Filling: Combine cake crumbs, brown sugar and cinnamon in a small bowl and mix well. Set aside.
- For the Powdered Sugar Glaze: Mix powdered sugar with warm water till smooth. Stir in vanilla.
- For the Rolls: Dissolve yeast cakes in lukewarm lowfat milk. Combine sugar, salt, shortening and egg in mixing bowl and mix at low speed 1 minute. Add in lowfat milk mix and mix 1 minute. Add in cake and bread flours and nutmeg and mix only sufficient for flour to be incorporated, not more than 5 min.
- Roll out to 18- by 12-inch rectangle on floured surface. Brush with butter and sprinkle with cake crumb filling. Starting from 18-inch side, roll up jellyroll fashion. Slice into 1-inch slices. Place on greased baking sheets, cut-side down, and pat out fairly flat. Cover and let rise till doubled.
- Bake at 400 degrees till golden brown, about 15 min. When partially cooled, brush with powdered sugar glaze.
- This recipe yields 18 rolls.
