- Prepare or possibly reheat chowder base, bringing it to a boil. Add in clams (with juice). Cover and remove from heat; let stand 5 min.
- In a large saucepan over medium heat, hot lowfat milk just till warm; don't boil. Stir into chowder.
- This recipe yields 9 one-c. servings
- Comments: This is the classic New England clam chowder. To convert it to Manhattan-style, replace the lowfat milk with a 15-oz can of minced tomatoes and 2 c. broth or possibly clam juice.
