,%20and%20then%20I%20used%20that%20homemade%20broth%20to%20make%20the%20soup...%20which%20means%20that%20this%20soup%20is%20completely%20vegetarian%20(I%20think).%20I%20don't%20usually%20cook%20vegetarian,%20and%20if%20I%20do,%20it's%20usually%20by%20accident,%20like%20it%20was%20here.%20I'm%20pretty%20sure%20the%20only%20reason%20I%20refrained%20from%20crumbling%20some%20bacon%20on%20top%20or%20adding%20some%20sausage%20is%20that%20this%20soup%20came%20out%20so%20incredibly%20delicious%20as%20is.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EPreparation%3C/p%3E%3Cp%3EHeat%20the%20oil%20in%20a%20soup%20pot%20over%20medium%20heat.%20Add%20the%20onion%20and%20garlic.%20Cook,%20stirring%20occasionally,%20until%20the%20onion%20is%20translucent,%204%20to%206%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20carrots,%20leek,%20and%20celery.%20Cook,%20stirring%20occasionally,%20until%20softened,%205%20to%207%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20tomato%20paste,%20stir%20well,%20and%20cook%20for%202%20more%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20remaining%20ingredients%20and%20bring%20to%20a%20simmer%20over%20medium-low%20heat.%20Cook%20until%20the%20lentils%20are%20tender,%20about%2040%20minutes.%20Remove%20and%20discard%20the%20sachet%20and%20lemon%20half.%20Puree%20the%20soup%20if%20desired%20(the%20lentils%20may%20have%20already%20turned%20into%20a%20puree%20by%20this%20time).%3C/p%3E%3Cp%3EAdjust%20the%20seasoning%20to%20taste%20with%20salt%20and%20pepper.%20Serve%20in%20heated%20bowls,%20garnished%20with%20the%20croutons.%3C/p%3E%3Cp%3EThis%20tasty%20soup%20was%20slightly%20sweet%20from%20the%20wine%20and%20sherry%20wine%20vinegar,%20richly%20flavored%20from%20the%20homemade%20broth,%20and%20nicely%20textured%20from%20the%20lentils%20and%20veggies.%20It's%20both%20warming%20and%20filling.%20It%20was%20exactly%20the%20sort%20of%20lentil%20soup%20I%20had%20been%20inventing%20in%20my%20head%20when%20my%20craving%20first%20started.%3C/p%3E%3Cp%3EI%20followed%20the%20recipes%20above%20with%20the%20following%20exceptions:%20For%20some%20reason%20I%20couldn't%20find%20fennel%20at%20Whole%20%20Foods,%20so%20I%20didn't%20have%20that%20for%20the%20broth.%20But%20the%20parsnip%20adds%20a%20similar%20flavor,%20so%20I%20don't%20think%20it%20was%20a%20huge%20loss%20flavor-wise.%20I%20also%20used%20pepper%20instead%20of%20peppercorns%20and%20left%20out%20the%20juniper%20berries%20when%20making%20the%20broth.%20I%20skipped%20the%20caraway%20seeds%20in%20the%20cheesecloth%20pouch%20because%20I%20didn't%20want%20that%20flavoring%20in%20the%20soup%20(it's%20okay%20in%20rye%20bread%20though),%20and%20instead%20of%20croutons,%20I%20topped%20each%20serving%20with%20grated%20Parmesan%20cheese.%20The%20results%20were%20phenomenal.%3C/p%3E%3Cp%3EIf%20you're%20a%20fan%20of%20lentils,%20I%20highly%20recommend%20this%20hearty%20soup.%3C/p%3E%3Cp%3EHave%20you%20been%20making%20any%20soup%20this%20winter?%20What%20kinds?%3C/p%3E){kind=link}
