Classic Meat Loaf With Roasted Vegetables

Ingredientes

  • 4 slc White sandwich bread, crust trimmed, bread torn into bite-sized pcs
  • 2 x Large eggs
  • 4 Tbsp. Worcestershire sauce
  • 1 c. Minced onion
  • 1/3 c. Plus 1 Tbsp. ketchup
  • 1 Tbsp. Garlic pwdr
  • 1/2 tsp Salt
  • 1/2 tsp Grnd pepper
  • 1 1/2 lb Lean grnd beef
  • 1 can (14-1/2 ounce) beef broth
  • 1 lrg Red-skinned sweet potato, (yam), peeled, quartered lengthwise
  • 2 x Russet potatoes, peeled, quartered lengthwise
  • 4 x Carrots, peeled, halved lengthwise

Direcciones

  1. Preheat oven to 375 degrees F. Mash bread, Large eggs and 3 Tablespoons Worcestershire sauce in large bowl till smooth paste forms. Fold in onion, 1/3 c. ketchup, garlic pwdr, salt and pepper. Add in beef and mix thoroughly. Mound meat mix in 9" x 13" x 2" deep baking pan, shaping into 4" x 8" loaf.
  2. Spread remaining 1 Tablespoons ketchup over meat loaf. Pour broth and remaining 1 Tablespoons Worcestershire sauce into pan around meat loaf. Arrange vegetables around meat loaf. Cover pan with foil. Bake 45 min. Uncover; bake till vegetables are tender and meat loaf is cooked through, about 35 min.
  3. Using spatula, transfer meat loaf to platter. Surround with vegetables; spoon some pan juices over.
