Ingredientes

  • 125 gm Skinned, boneless chicken breast, cut into thin strips (4oz)
  • 2 Tbsp. Sherry
  • 1 1/4 lt Chicken stock, (2 pints)
  • 1 Tbsp. Soy sauce
  • 1 bn Watercress, roughly minced Salt and freshly grnd black pepper Oil for frying
  • 2 slc Bread

Direcciones

  1. Place the chicken in a bowl and pour over the sherry.
  2. Place the stock and soy sauce in a saucepan and bring to the boil.
  3. Add in the chicken and sherry and simmer for 5 min.
  4. Stir in the watercress and simmer for 5 min.
  5. To make the croutons, cut the bread into 1 cm (1/2 inch) squares and fry in the oil till crisp and golden brown. Drain and serve with the soup.
  6. NOTES : A delicious quick and easy soup to prepare. Ideal for a starter or possibly for a light lunch.
