Ingredientes

  • 2 cups of coconut, grated
  • 1 cup of sugar
  • 1 1/2 cups of butter, creamed
  • 2 eggs
  • 1 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of lemon peels (optional)
  • A pinch of salt

Direcciones

  1. 1 Butter and flour a medium-sized muffin pan. Pre-heat oven at 390 °F (200 °C).
  2. . Sift flour, salt and baking powder together. Put aside.
  3. Mix sugar and butter and whip until it turns a light color. Add eggs one by one, waiting until the previous one is thoroughly mixed before adding the next. Add flour and coconut and keep beating until they are well mixed.
  4. Pour two spoonfuls of the batter in each muffin cup (you can use an icing tip for better presentation)
  5. Bake until they turn golden brown on top. Serve at room temperature.
