- Method:MAKE a hole at the top of the young coconut. Pour out coconut water and blend with sufficient basic syrup. Leave in the refrigerator to chill.
- Split coconut into half and scrape out the young flesh. Mix coconut flesh and pineapple cubes in a large goblet. Add a dash of lime juice and a healthy pinch of salt. Drop in ice cubes and pour in chilled coconut water. Serve with maraschino cherries.
- Basic SyrupHow to prepare basic syrup:1 c. sugar1 c. water2 pandan leaves - knotted
- Method:PLACE sugar, water and pandan leaves in a deep saucepan. Bring to the boil, lower heat and simmer till sugar is dissolved. Remove pandan leaves and strain the syrup. Leave to cold for use as a basic syrup. You can store the basic syrup in a bottle in the refrigerator.
