  • 1 x young coconut
  • 1 c. pineapple cubes (canned) Basic syrup to taste
  • 1 pch salt
  • 1 x juice of 1 lime

  1. Method:MAKE a hole at the top of the young coconut. Pour out coconut water and blend with sufficient basic syrup. Leave in the refrigerator to chill.
  2. Split coconut into half and scrape out the young flesh. Mix coconut flesh and pineapple cubes in a large goblet. Add a dash of lime juice and a healthy pinch of salt. Drop in ice cubes and pour in chilled coconut water. Serve with maraschino cherries.
  3. Basic SyrupHow to prepare basic syrup:1 c. sugar1 c. water2 pandan leaves - knotted
  4. Method:PLACE sugar, water and pandan leaves in a deep saucepan. Bring to the boil, lower heat and simmer till sugar is dissolved. Remove pandan leaves and strain the syrup. Leave to cold for use as a basic syrup. You can store the basic syrup in a bottle in the refrigerator.
