%3C/p%3E%3Cp%3EToday's%20dish%20has%20been%20on%20my%20to-make%20list%20for%20a%20long%20time%20and%20when%20I%20saw%20Coconut%20cream%20buns%20on%20Valli's%20'Tea%20Kadai%20menu'%20theme%20for%20BM%23%2030,%20I%20knew%20it%20was%20time%20to%20make%20these%20buns.%20I'm%20not%20sure%20how%20the%20actual%20coconut%20cream%20buns%20that%20are%20sold%20at%20the%20the%20stall%20look%20like,%20but%20I%20went%20ahead%20and%20made%20these%20super%20soft%20and%20fluffy%20buns%20with%20a%20sweet%20coconut%20glaze.%20We%20loved%20them%20a%20LOT.%3C/p%3E%3Cp%3EI%20bookmarked%20this%20recipe%20for%20coconut%20buns%20aka%20Pani%20Popo%20from%20King%20Arthur's%20site%20over%202%20years%20ago.%20Pani%20popo%20are%20Samoan%20coconut%20buns%20where%20soft,%20tender%20buns%20are%20bathed%20and%20baked%20in%20sweet%20coconut%20syrup.%20The%20thought%20of%20gooey%20sweet%20creamy%20coconut%20was%20so%20enticing%20and%20delicious,%20but%20it%20took%20me%20all%20this%20time%20to%20finally%20make%20them.%3C/p%3E%3Cp%3EThe%20buns%20did%20not%20disappoint.%20They%20were%20as%20tasty%20and%20indulgent%20as%20I%20had%20imagined.%20The%20best%20part%20is%20scooping%20up%20warm%20coconut%20sauce%20with%20the%20warm,%20flaky%20bun%20and%20eating%20it%20right%20out%20of%20the%20baking%20pan,%20yummmm!!%3C/p%3E%3Cp%3EOriginal%20recipe%20used%20eggs,%20but%20I%20used%20egg%20replacer%20and%20the%20buns%20came%20out%20perfect.%20You%20can't%20even%20tell%20these%20are%20eggless,%20they%20were%20just%20as%20soft%20and%20fluffy%20as%20the%20ones%20with%20eggs.%3C/p%3E%3Cp%3ETo%20make%20this,%20first%20we%20have%20to%20make%20buns%20using%20a%20sweet%20yeast%20dough%20and%20then%20bake%20them%20with%20the%20sweet%20coconut%20sauce.%20I%20think%20the%20next%20time%20I%20make%20them%20I'm%20going%20to%20add%20some%20wholewheat%20flour%20to%20amp%20up%20the%20fiber%20and%20make%20them%20a%20little%20guilt%20free.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EMake%20the%20Dough%20for%20Buns:%20Combine%20all%20the%20ingredients%20for%20the%20bun%20in%20the%20bowl%20of%20a%20stand%20mixer,%20or%20a%20large%20bowl.%20Mix%20and%20knead%20until%20everything%20comes%20together%20into%20a%20smooth%20dough,%20about%205-7%20minutes%20with%20the%20stand%20mixer.%20Dough%20should%20be%20soft%20and%20pliable.%3C/p%3E%3Cp%3EPlace%20the%20dough%20in%20a%20greased%20bowl.%20Cover%20and%20let%20rise%20until%20doubled%20in%20volume,%20about%201%20hour.%3C/p%3E%3Cp%3EGrease%20a%209%22x13%22%20cake%20pan.%20Set%20aside.%3C/p%3E%3Cp%3EAfter%20the%20first%20rise,%20gently%20punch%20the%20dough%20and%20divide%20into%2012%20equal%20pieces.%3C/p%3E%3Cp%3EShape%20each%20piece%20into%20a%20rough%20ball%20by%20pulling%20the%20dough%20into%20a%20very%20small%20knot%20at%20the%20bottom.%20Roll%20into%20a%20smooth%20ball%20and%20evenly%20place%20them%20in%20the%20greased%20pan.%3C/p%3E%3Cp%3ECover%20loosely%20with%20plastic%20wrap%20and%20let%20rise%20for%2045-60%20minutes.%3C/p%3E%3Cp%3EAbout%20halfway%20through%20the%20rising,%20preheat%20the%20oven%20to%20350%C2%B0F.%3C/p%3E%3Cp%3EMake%20the%20Coconut%20Sauce:%20Last%2020%20minutes%20of%20rising,%20make%20the%20sauce.%20Combine%20all%20the%20ingredients%20for%20the%20sauce%20in%20a%20small%20saucepan%20over%20medium-high%20heat.%20Whisk%20well%20to%20combine%20and%20cook%20for%205-7%20minutes%20until%20sauce%20thickens.%3C/p%3E%3Cp%3EMake%20Pani%20Popo:%20After%20the%20buns%20have%20risen,%20pour%20the%20sauce%20evenly%20over%20them%20and%20bake%20for%2018-25%20minutes%20until%20the%20tops%20are%20golden%20brown.%20I%20baked%20mine%20for%2022%20minutes.%3C/p%3E%3Cp%3ECool%20in%20the%20pan%20and%20serve%20them%20warm%20from%20right%20out%20of%20the%20pan.%20If%20you%20want%20to%20save%20them%20for%20later,%20then%20invert%20them%20onto%20a%20cooling%20rack,%20store%20in%20an%20airtight%20container%20for%20up%20to%202-3%20days.%3C/p%3E%3Cp%3ELets%20check%20out%20what%20my%20fellow%20marathoners%20have%20cooked%20today%20for%20BM%23%2030.%3C/p%3E%3Cp%3EPin%20It%20Now!%3C/p%3E){kind=link}
