Coconut Shortbread

Delicious - especially for the Holidays

Ingredientes

  • 2 cups butter, softened
  • 1 cup sugar
  • 2 tsp vanilla
  • 4 cups flour
  • 1/2 cup flaked coconut
  • confectioners' sugar

Direcciones

  1. In a large bowl, cream the butter and sugar until light and fluffy
  2. Beat in the vanilla
  3. Gradually add the flour
  4. Mix well
  5. Stir in the coconut
  6. Shape into two 8-inch rolls
  7. Wrap each in plastic wrap
  8. Refrigerate for 4 hours or until firm
  9. Unwrap and cut into 1/4 inch slices
  10. Place 1 inch apart onto ungreased baking sheets
  11. Bake at 350 F for 12-15 minutes or until the edges are lightly browned.
  12. Dip both sides of the cookies in the confectioners' sugar while still warm
  13. Cool on wire racks
