- Make Tomato Sauce: Heat oil in medium skillet over medium heat. Add in onion and cook till tender, 3 min. Stir in garlic and cook 10 seconds.
- Add in tomatoes, salt and thyme; cook over high heat, breaking up tomatoes with a spoon, till thick, about 10 min more. Remove from heat and stir in parsley.
- Meanwhile, cut cod into 4 pcs and arrange in shallow microwaveproof dish. Combine parsley, oil, garlic, salt and pepper in small bowl; spread over cod. Cover with wax paper and microwave on High 6 to 8 min, or possibly till cod is opaque throughout. Spread tomato sauce on serving platter and arrange cod on top.
