Ingredientes
- 1 Tbsp. Extra virgin olive oil
- 1/4 c. Finely minced onion
- 1 tsp Chopped garlic
- 1 can Tomatoes, (14 ounce.)
- 1/4 tsp Salt
- 1/8 tsp Thyme
- 2 Tbsp. Minced fresh flat-leaf parsley
- 1 1/2 lb Cod fillet, 1-inch thick
- 3 Tbsp. Minced fresh flat-leaf parsley
- 1 Tbsp. Extra-virgin extra virgin olive oil
- 1/2 tsp Chopped garlic
- 1/4 tsp Salt
- 1/4 tsp Freshly grnd pepper
Direcciones
- 1. Make Tomato Sauce: Heat oil in medium skillet over medium heat. Add in onion and cook till tender, 3 min. Stir in garlic and cook 10 seconds.
- Add in tomatoes, salt and thyme; cook over high heat, breaking up tomatoes with a spoon, till thick, about 10 min more. Remove from heat and stir in parsley.
- 2. Meanwhile, cut cod into 4 pcs and arrange in shallow microwaveproof dish. Combine parsley, oil, garlic, salt and pepper in small bowl; spread over cod. Cover with wax paper and microwave on High 6 to 8 min, or possibly till cod is opaque throughout. Spread tomato sauce on serving platter and arrange cod on top.
