Ingredientes

  • 3 lbs onion, finely chopped
  • 12 oz celery, finely chopped
  • 1 tsp garlic powder
  • 1 oz salt
  • 3 lbs green pepper, sliced
  • 50 portions, cod
  • 3 lbs red pepper, sliced
  • 2 Tbsp salt
  • 4 oz olive oil
  • 2 cans tomato, diced with juice
  • 2 oz oregano
  • 6 oz lemon juice

Direcciones

  1. In olive oil, saute onions, celery, green and red peppers, until translucent but not brown.
  2. Cook 5 minutes.
  3. Add lemon juice and diced tomatoes with juice.
  4. Cook 10-15 minutes, reduce liquid by 1/4
  5. Add garlic, oregano, salt, and pepper.
  6. Ladle into hotel pans, place thawed cod filet on top.
  7. Cover and cook 5 minutes or to 145F.
  8. Garnsih with fresh parsley and/or herbs.
