.%20He%20got%20me%204%20books%20-%20not%20cookbooks,%20but%20books%20known%20for%20their%20exquisite%20passages%20on%20food.%20Two%20are%20foodie%20books:%20Heat%20by%20Bill%20Buford%20and%20On%20Food%20and%20Cooking%20by%20Harold%20McGee;%20and%20the%20other%20two%20are%20more%20literary:%20The%20Belly%20of%20Paris%20by%20Emile%20Zola%20and%20When%20You%20Lunch%20with%20the%20Emperor%20by%20Ludwig%20Bemelmans.%3C/p%3E%3Cp%3EBefore%20I%20dive%20into%20them,%20I%20promised%20myself%20I'd%20finish%20the%20book%20I'm%20currently%20reading:%20Mockingjay%20-%20the%20final%20book%20in%20the%20Hunger%20Games%20trilogy.%20The%20book's%20an%20easy%20read%20but%20it's%20slow%20going%20because%20I%20cannot%20find%20the%20time%20to%20read.%20I'll%20get%20there%20though.%3C/p%3E%3Cp%3EAnybody%20read%20these%20books?%20thoughts%20on%20them?%20I%20can't%20wait%20to%20dive%20in.%20I%20think%20I'll%20start%20with%20Heat%20and%20go%20from%20there.%20But%20my%20summer%20reading%20list%20is%20all%20set.%3C/p%3E%3Cp%3EComposed%20Salad%20of%20Greens,%20Goat%20Cheese,%20and%20Caramelized%20Pecans%3C/p%3E%3Cp%3EFrom%20Essential%20Pepin%20by%20Jacques%20Pepin%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EPut%20the%20pecans%20in%20a%20skillet%20and%20cover%20(barely)%20with%20water.%3C/p%3E%3Cp%3EBring%20to%20a%20simmer%20over%20high%20heat,%20and%20immediately%20drain.%20Return%20the%20pecans%20to%20the%20pan%20and%20add%20the%20oil,%20sugar,%20salt,%20and%20cayenne.%20Cook%20over%20medium-high%20heat,%20stirring,%20until%20the%20nuts%20brown%20and%20the%20sugar%20mixture%20caramelizes.%20Transfer%20the%20pecans%20to%20a%20plate%20to%20cool.%3C/p%3E%3Cp%3EHalve%20the%20apple%20and%20remove%20the%20core.%20Cut%20it%20into%201/2-inch-thick%20slices.%20Stack%20the%20slices%20and%20cut%20them%20into%201/2-inch%20wide%20strips.%20Mix%20the%20apple%20strips%20with%20the%20lemon%20juice%20and%20set%20aside.%3C/p%3E%3Cp%3EFor%20the%20dressing:%3C/p%3E%3Cp%3EMix%20all%20the%20ingredients%20together%20in%20a%20large%20bowl.%3C/p%3E%3Cp%3EAt%20serving%20time,%20toss%20the%20greens%20with%20the%20vinaigrette,%20and%20arrange%20on%20individual%20plates.%20Sprinkle%20with%20the%20apple%20strips,%20crumbled%20cheese,%20and%20pecans.%20Serve%20immediately.%3C/p%3E){kind=link}
