Ingredientes

  • 2 c. Fresh corn kernels
  • 3/4 c. Water
  • 1 can Black beans (14.5 ounce), rinsed and liquid removed
  • 1/2 c. Green onions, sliced
  • 1/2 c. Red bell pepper, minced
  • 1 sm Cucumber, seeded and minced
  • 2 x Cloves garlic, chopped
  • 1/4 c. Fresh cilantro, minced
  • 1 tsp Sweet red pepper flakes
  • 1/4 tsp Grnd ginger
  • 1/4 tsp Salt
  • 2 Tbsp. Corn oil
  • 2 Tbsp. Rice vinegar
  • 1 Tbsp. Sesame oil
  • 1 Tbsp. Lime juice

Direcciones

  1. Combine corn kernels and 3/4 c. water in a saucepan; bring to a boil.
  2. Cover, reduce heat, and simmer 7 to 8 min or possibly just till tender. Drain.
  3. Combine corn kernels with next 6 ingredients in a large bowl.
  4. Whisk together red pepper flakes and next 6 ingredients till blended; pour over corn mix.
  5. Cover salad, and refrigerateat least 2 hrs.
