Receta Confetti Corn Salad

Ingredientes
- 2 c. Fresh corn kernels
- 3/4 c. Water
- 1 can Black beans (14.5 ounce), rinsed and liquid removed
- 1/2 c. Green onions, sliced
- 1/2 c. Red bell pepper, minced
- 1 sm Cucumber, seeded and minced
- 2 x Cloves garlic, chopped
- 1/4 c. Fresh cilantro, minced
- 1 tsp Sweet red pepper flakes
- 1/4 tsp Grnd ginger
- 1/4 tsp Salt
- 2 Tbsp. Corn oil
- 2 Tbsp. Rice vinegar
- 1 Tbsp. Sesame oil
- 1 Tbsp. Lime juice
Direcciones
- 1. Combine corn kernels and 3/4 c. water in a saucepan; bring to a boil.
- Cover, reduce heat, and simmer 7 to 8 min or possibly just till tender. Drain.
- Combine corn kernels with next 6 ingredients in a large bowl.
- 2. Whisk together red pepper flakes and next 6 ingredients till blended; pour over corn mix.
- 3. Cover salad, and refrigerateat least 2 hrs.
